My friend, Deanna, introduced us to this recipe a year or so ago.  It is extremely tasty, and don't let the ingredients scare you!!  I loved it, and then after I got the recipe, I was slightly concerned about making it!  Ever have recipes like that?  I followed the directions, and it was just as tasty when I made it! :)

Galloping Horses
1/2 t. oil
2-3 cloves mined garlic
1 T. cilantro
1 lb. ground beef (or pork)
2 T. ground roasted peanuts
3 T. oyster sauce
3 T. brown sugar
1-2 jalapeno peppers
serve with rice and extra peanuts
  1. Heat oil in skillet.
  2. Add garlic, cilantro, and peppers.
  3. Add beef or pork, peanuts, oyster sauce, and sugar.
  4. Cook over medium high heat until brown (liquid should dissipate).  Be careful not to burn (Deanna cooks it for about 10 minutes on medium heat).
notes:
-prep all of your ingredients ahead of time
-to make jalapenos less "hot", take out the seeds, and cut out the veins (white part) inside
-we've only had this with beef

I need to add some new recipes to my routine, so I'm going to start stealing some of yours - starting with this one. It's going on the calendar for next week. Watch out!
Sorry to hear about Claire's bad catheter experience. Some days being a mom is more fun than others.
